Carrot Cupcakes

Diary of a SAHM – Day 81

Today, I just felt like baking carrot cupcakes and so I did. However, I was too lazy to  grate 2 1/2 cups of carrots as required in the previous carrot cake recipe which I shared here. So I did what I normally do, i.e. I asked Mr Google, and this was what I found:

Carrot Cupcakes Recipe

1 1/3 cups (175 grams) all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup (120 ml)walnuts, chopped
2 large eggs
2/3 cup (135 grams) granulated white sugar
2/3 cup (160 ml) vegetable, safflower, corn, or canola oil
1/2 teaspoon pure vanilla extract
2/3 cup (160 ml) unsweetened applesauce (or grated apple or crushed pineapple)
1 1/3 cups (320 ml) finely grated raw carrots (about 225 grams)

Cream Cheese Frosting:
1/4 cup (55 grams)butter, room temperature
4ounces (115 grams) cream cheese, room temperature
2 1/4 cups (250 grams) icing sugar, sifted
1/2 teaspoon pure vanilla extract

I used grated apple since I didn’t have unsweetened applesauce. I omitted walnuts (which I didn’t have) and added some raisins instead. The cupcakes turned out well but there were slightly too sweet to my liking. If I were to bake this again, I’d probably halve the amount of sugar. This time around, I didn’t bother with the cream cheese frosting.
